Spring 2011
Course Description: This course is intended to give the student an intermediate-level study of food science, physical education, and mental wellness.
Course Goals: Upon completion of this course, the student should be able to:
- Demonstrate an expanded repertoire of cooking recipes
- Show greater comfort and familiarity in cooking already known recipes
- Demonstrate proficiency in running up to a 5K distance
- Demonstrate the acquisition of a daily exercise habit, including regular resistance training
- Demonstrate a continued willingness to attempt unfamiliar physical activities in the name of fun and fitness
- Be able to articulate some of the social and political facets of the world food system
- Be more cognizant of negative body image messages

Grading: The course grade will be based on the following (100 total pts):
ASSIGNMENTS (20 points):
There are 12 possible assignments in the class, worth 2 points each for completion of the described task. See “class schedule” below for a description of these assignments.
PARTICIPATION (40 points):
There are 2 types of participation required by this course:
1) Averaging 180 minutes or more of exercise per week over 16 weeks (20 points possible)
a. 180 minutes or more: 20 points
b. 160 minutes or more: 16 points
c. 140 minutes or more: 14 points
d. 120 minutes or more: 10 points
e. 100 minutes or more: 8 points
f. 80 minutes or more: 6 points
g. 60 minutes or more: 4 points
2) Student will eat no more than 3 meals weekly out at restaurants (20 points possible)
Grading: 1 point for each successful week
EXAMS (40 points): There will be 4 exams, each worth 10 points:
Exam #1: A Weighty Month
During this month, the student will complete at least twice weekly sessions of weight training
Grading for this exam: 10 points: 8 sessions, 9 points: 7 sessions, 8 points: 6 sessions, 7 points: 5 sessions, 5 points: 4 sessions, 3 points: 3 sessions, 2 points: 2 sessions, 1 point: 1 session, 0 points: 0 sessions
Exam # 2: 5K
Sign up for and complete a 5K
Grading for this exam: 10 points for completing a 5K (0 points for not completing a 5K, except in case of injury)
Exam #3: Cooking Intensive Month
Student will cook at least 12 new recipes this month, and will also replicate at least 6 recipes from last fall’s cooking class
Grading for this exam: 10 points: 16-18 recipes, 9 points: 14-15 recipes, 8 points: 12-13 recipes, 7 points: 10-11 recipes, 5 points: 8-9 recipes, 3 points: 6-7 recipes, 2 points: 4-5 recipes, 1 point: 1-3 recipes, 0 points: 0 recipes
Exam #4: Cooking with Daniel
Student will work with her husband to generate a list of 5 recipes & will cook each with him in preparation for his weekly cooking. Student will prepare a document for the husband with each of these recipes and ingredients.
Grading for this exam: 10 points: completing 5 joint cooking sessions and preparing recipe book, 8 points: completing 4 sessions, 6 points: completing 3 sessions, 4 points: completing 2 sessions, 2 points: completing 1 session, 0 points: completing 0 sessions (or not completing recipe book)
The dates of the exams are listed on the class schedule.
Letter grades will be assigned as follows:

. I’m really hoping the Love Your Body book isn’t incredibly cheesy–it’s hard to know how much help you’re going to get when you venture into the Self-Help section of the bookstore…But the internet reviews seemed promising.
